What Makes It An Anti-Cancer Recipe:

Cancer-Conscious Blueberry Cheesecake Bars
Ingredients
For The Base
- 1/2 cup shredded unsweetened coconut
- 1 cup pecans - or almonds, or cashews
- 3/4 cup medjool dates - pitted
- 2 tablespoons ground flaxseed
- pinch sea salt
For The Filling
- 1 1/2 cups raw cashews - soaked and drained
- 3/4 cup full-fat coconut milk
- 1/4 cup monk fruit sweetener
- 2 tablespoons coconut oil - solid
- 1 teaspoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1 cup blueberries - fresh or frozen
- 1 tablespoon monk fruit sweetener
- 1 teaspoon fresh lemon juice
Instructions
- Line an 8×8 inch square baking pan with parchment paper.
- Add 1/2 cup shredded unsweetened coconut, 1 cup pecans, 3/4 cup medjool dates, 2 tablespoons ground flaxseed, and pinch sea salt to a food processor. Blend until the mixture forms a sticky paste that holds together when pressed.
- Press mixture evenly into the prepared pan. Place in freezer while making the filling.
- Blend soaked 1 1/2 cups raw cashews, 3/4 cup full-fat coconut milk, 1/4 cup monk fruit sweetener, 2 tablespoons coconut oil, 1 teaspoon fresh lemon juice, and 1 teaspoon vanilla extract until completely smooth and creamy.
- Pour filling over crust and smooth evenly.
- In a small saucepan, cook 1 cup blueberries, 1 tablespoon monk fruit sweetener, and 1 teaspoon fresh lemon juice over medium heat for 7–8 minutes until slightly thickened.
- Drop small, separate dollops of the blueberry compote evenly across the surface (about 8–10 dollops). Do not spread.
- Use the tip of a knife to gently swirl through each dollop to create a marbled effect. Avoid over-swirling.
- Freeze for at least 4 hours or overnight until firm.
- Let sit 5–10 minutes before slicing. Store leftovers in freezer.
