Cancer-Conscious No-Bake Protein Bites
Ingredients
- 3/4 cup almond butter
- 3/4 cup plant-based protein powder - “CANCERCONSCIOUS” saves 20%
- 1 cup rolled oats
- 2 tablespoons whole flax seeds - freshly ground
- 1 tablespoon chia seeds
- 1/4 cup pumpkin seeds
- 1/4 cup walnuts - chopped
- 1/4 cup dried cranberries - optional
- 2 to 4 tablespoons unsweetened almond milk
- 1 teaspoon pure vanilla extract
- pinch sea salt
Instructions
- Grind 2 tablespoons whole flax seeds in a blender or coffee grinder until freshly ground.
- In a large bowl combine 3/4 cup plant-based protein powder, 1 cup rolled oats, ground flax, 1 tablespoon chia seeds, 1/4 cup pumpkin seeds, 1/4 cup walnuts, 1/4 cup dried cranberries (if using) and sea salt.
- Add 3/4 cup almond butter and 1 teaspoon pure vanilla extract.
- Mix until crumbly, then add almond milk 1 tablespoon at a time until a thick dough forms that holds when pressed.
- Roll into small 2 tablespoon sized balls.
