- 3 cloves garlic - minced
- 1 tablespoon fresh ginger - grated
- 1 1/2 pounds carrots - peeled and chopped
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 4 cups low-sodium vegetable broth
- 1/2 cup full-fat coconut milk or cashew cream
- 1 tablespoon lemon juice or apple cider vinegar

Instructions

- Pour in 4 cups low-sodium vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer 20–25 minutes until carrots are very tender.
- Blend until smooth using an immersion blender or high-speed blender.
- Stir in 1/2 cup full-fat coconut milk or cashew cream and 1 tablespoon lemon juice or apple cider vinegar. Season with sea salt to taste.
