Kale & Sweet Potato Nourish Bowl
Ingredients
For the Bowl
- 1 cup dry kidney beans - soaked over night
- 2/3 cup dry quinoa
- 2 medium sweet potatoes - cubed
- 1 tablespoon avocado oil - divided
- 1 teaspoon smoked paprika
- 4 cups kale - de-stemmed and chopped
- 1 avocado - sliced
- 1 small cucumber - sliced (optional)
- 1 tablespoon pumpkin seeds - toasted
- 1 tablespoon hemp seeds - optional
For the dressing:
- 1/2 cup tahini
- 4 tablespoons apple cider vinegar
- 1 teaspoon turmeric powder
- 1 tablespoon dijon mustard
- 4 tablespoons monk fruit sweetener
- 2 to 4 tablespoons water
- pinch of sea salt
- pinch of black pepper
Instructions
- Add 1 cup dry kidney beans and 4 cups water to a pressure cooker. If using soaked beans, cook on high pressure for 5–8 minutes with a natural release. If using unsoaked beans, cook on high pressure for 15–18 minutes with a natural release. Drain and set aside.
- Cook 2/3 cup dry quinoa according to package directions. Set aside.
- Preheat the oven to 400°F.
- Toss 2 medium sweet potatoes with 1 tablespoon avocado oil and 1 teaspoon smoked paprika. Spread onto a baking sheet and roast for 20–25 minutes, flipping halfway through, until tender and lightly browned.
- Add 4 cups kale to a large bowl with 1 tablespoon avocado oil and a pinch of sea salt. Massage for 1–2 minutes until softened.
- Make the dressing by whisking together 1/2 cup tahini, 4 tablespoons apple cider vinegar, 1 tablespoon dijon mustard, 1 teaspoon turmeric powder, 4 tablespoons monk fruit sweetener, 2 to 4 tablespoons water, pinch of sea salt, and pinch of black pepper. Add additional water as needed to reach a pourable consistency.
- Divide the quinoa between four bowls. Top with kale, roasted sweet potatoes, kidney beans, avocado, and cucumber.
- Finish with pumpkin seeds, hemp seeds, and a generous drizzle of turmeric tahini vinaigrette.

Storage
Store the cooked quinoa, roasted sweet potatoes, and kidney beans together in an airtight container in the refrigerator for up to 4 days. Store the massaged kale separately in its own container for up to 4 days. When ready to serve, the kale can be enjoyed cold or added to the warm quinoa, sweet potatoes, and beans. The residual heat will gently soften the kale even further, making it easier to digest for those who prefer not to eat raw greens. Store the turmeric tahini vinaigrette separately in an airtight jar or container in the refrigerator for up to 5 days. If it thickens, whisk in a splash of water before serving.
