- 1/2 cup onion - chopped
- 1 tablespoon fresh ginger - grated
- 1 cup fresh cilantro or fresh parsley - chopped
- 1 teaspoon cumin powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon salt
- avocado oil - for frying
Instructions
- Drain the soaked 1 cup red lentils completely.
- Add 1 cup red lentils, 1/2 cup water, and 2 garlic cloves to a food processor and blend until a smooth paste forms.
- Add 1/2 cup onion (chopped), 1 tablespoon fresh ginger (grated), 1 cup fresh cilantro or fresh parsley, 1 teaspoon cumin powder, 1/2 teaspoon turmeric powder, and 1/2 teaspoon salt. Pulse until just combined — the batter should be thick with some texture remaining.
- Heat a pan over medium-low heat and generously coat the entire surface with avocado oil.
- Once the pan is hot, scoop batter using a cookie scoop or a 1/3 cup measuring cup.
- Immediately shimmy the pancakes slightly with a spatula to prevent sticking.
- Cook for 2–3 minutes per side, or up to 5 minutes per side for extra crispiness.
