Rainbow Greek Sorghum Salad
Ingredients
For the salad
- 1 cups dry sorghum
- 1 cup green lentils - dried
- 3 cups water
- 2 cup cherry tomatoes - halved
- 2 cup cucumber - diced
- ⅓ cup red onion - finely diced
- ⅓ cup olives - sliced
- ¼ cup fresh parsley - chopped
- ¼ cup fresh dill - chopped
- ¼ cup vegan feta - optional
For The dressing
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon dijon mustard
- 1 clove garlic - minced
- ½ teaspoon dried oregano
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
Instructions
- While lentils cook, bring a large pot of salted water to a boil. Cook 1 cups dry sorghum in 4 cups of water for 30-45 minutes until al dente. Drain and rinse briefly with cool water to stop the cooking process. Set aside to cool.
- Rinse 1 cup green lentils thoroughly. Add lentils and 3 cups water to a saucepan. Bring to a boil, reduce to a gentle simmer, and cook for 18–22 minutes until tender but not mushy. Drain and set aside to cool.
- In a small bowl, whisk together 3 tablespoons extra virgin olive oil, 2 tablespoons fresh lemon juice, 1 teaspoon dijon mustard, 1 clove garlic, ½ teaspoon dried oregano, ½ teaspoon sea salt, and ¼ teaspoon black pepper.
- In a large mixing bowl, combine cooled pasta, cooled lentils, 2 cup cherry tomatoes, 2 cup cucumber, ⅓ cup red onion, ⅓ cup olives, ¼ cup fresh parsley, and ¼ cup fresh dill.
- Pour dressing over the salad and toss gently until evenly coated.
- If using, sprinkle ¼ cup vegan feta over top and gently fold in.
- Refrigerate for at least 30 minutes before serving to allow flavors to develop.
