Micro-Chopped Immunity Crunch Salad
Ingredients
for the salad
- 4 cups green cabbage
- 2 cups purple cabbage
- 2 persian cucumbers
- 3 green onions
- 1 cup shelled edamame
- 1/4 cup hemp hearts
For the dressing
- 1/3 cup extra-virgin olive oil
- 1/4 cup fresh lime juice – about 2 limes
- 1/2 avocado
- 1 garlic clove
- 2 tablespoons granular monk fruit sweetener - or honey or pure maple syrup
- 1 cup fresh cilantro
- 1/4 cup water - plus more to thin if needed
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
Instructions
- Finely chop 4 cups green cabbage, 2 cups purple cabbage, 2 persian cucumbers, and 3 green onions into very small bite-sized pieces.
- Add everything to a large mixing bowl.
- Stir in 1 cup shelled edamame and 1/4 cup hemp hearts.
- make the dressing combining 1/3 cup extra-virgin olive oil1/4 cup fresh lime juice – about 2 limes, 1/2 avocado, 1 garlic clove, 2 tablespoons granular monk fruit sweetener, 1 cup fresh cilantro, 1/4 cup water , 1/2 teaspoon sea salt, and 1/2 teaspoon black pepper in a small hand blender.
- Pur dressing over the salad and let sit for 10 minutes before serving so the dressing softens the cabbage slightly.
- Serve immediately or portion into meal prep containers for the week.
